Not an Introduction. Just a Reflection.
This letter isn’t an introduction to who we are or what Soulkadhi is. It’s simply a reflection from my Chef’s desk (And please, don’t imagine anything fancy. It’s a thrifted desk from the 1940s, probably made for kids. It's wildly uncomfortable, and honestly, I’ll probably move to my bed in a minute.) But now that I’ve given you a little context, let’s rewind.
When a Dream Lingers
Gaurav and I always wanted to go on a road trip. In 2020, when the world paused, we like so many others dreamt of converting a camper van and disappearing into the woods. That dream lingered for four years. Then in March on our wedding anniversary, I gave him a handmade card. On it, I drew us sitting on a camper van. Little did we know, by June 2024, we were in our van, pressing pause on our lives and heading out to explore Western Canada in an almost self converted camper van we named Sukoon.
The Shift
The journey was addictive. When we came back after a few months, returning to “normal life” felt impossible. Something inside us had shifted permanently. So in December, to figure out what exactly had changed, we hit the road again this time to explore the west coast of US. And truthfully? This is where the real fun began. (Okay fine—we were enjoying it all the way through.)
The Highway Menu
Somewhere between Portland and Spokane, on an open highway, we dreamt, debated, agreed, disagreed and eventually built the entire concept for Soulkadhi's menu. Of course, not everything made it to the final version (because trials and tastings were still left), but the soul of Soulkadhi was born right there between conversations, playlists, car snacks, gas stops and endless cups of chai.
From Sukoon to Soulkadhi
A few months later, we said goodbye to Sukoon. But she left us with Soulkadhi. Soulkadhi is a continuation of that journey. It’s another chapter in our story.
